Most of the world’s cassia cinnamon labelled “Indonesian” or “Korintje” comes from the highlands around Mount Kerinci in Sumatra.
What it is
Korintje cassia is the dried bark of Cinnamomum burmannii. It has a sweet, warm, familiar cinnamon flavour and is widely used in baking, confectionery and spice blends.
How it is graded
Trade grades are generally based on bark quality, thickness, colour, cleanliness and volatile oil content. Product is offered as whole sticks or quills, cut pieces, broken bark and powder.
What to ask your supplier
- Volatile oil content and moisture for the specific lot
- Cut size and tolerance for cut or broken grades
- Cleaning and sorting process, and microbiological testing
